Air freight for Chilean cherries to China
Cherries are the most demanding operation on Chile's fruit calendar: a short commercial window, high-value fruit and a peak that stretches the entire chain. Here's the logic behind when and how the fruit flies.
Market context: why China calls the shots
Chilean cherries have one dominant, unambiguous market. According to the Cherry Committee of Frutas de Chile, China takes more than 90% of Chile's fresh cherries, and demand organizes itself around a single date: Chinese New Year, when red cherries work as a premium gift. That turns the season into a short, extremely high-pressure commercial window rather than a steady flow.
The Lunar New Year date drives all planning. For the 2025-26 season it falls between February 17 and March 3, 2026 — a slightly later window than the prior year — which leaves more room to plan peak-season air shipments. The operational takeaway doesn't change: arriving on time and in condition is worth more than arriving cheap.
Air vs. ocean: when flying makes sense
The bulk of the cherry crop moves by sea. Air freight comes in where the vessel simply can't make the date, or where the value of the fruit justifies the rate: during the early window of the season and for premium fruit. The gap is measured in days: an air shipment to China runs ~2 to 3 days, while direct ocean service (the "Cherry Express" out of San Antonio, for example) takes on the order of ~23 days. Once the vessels start arriving, air stops penciling out on cost.
The industry pushes air capacity explicitly, through trade-association agreements (Frutas de Chile and ASOEX with China Eastern) and dedicated charters. In the 2025-26 season, the first cherry charter was operated by Ethiopian Airlines on the Santiago → Addis Ababa → Ezhou (Hubei) routing, carrying roughly 100 tonnes that landed in early November 2025; ultra-premium shipments moved to Chengdu (via a U.S. stopover) using NFC chip verification for authenticity and traceability. - Early window: being among the first on the shelf in China, when the per-kilo price is at its highest. Here, flying is the only way to hit the target date.

- Premium fruit: high-value varieties or sizes whose arrival condition justifies the air rate and demands maximum cold chain protection.
The real pressure: time, quality and visibility
With cherries, arrival condition is the price. Early in the 2025-26 season, air-freighted fruit posted high opening prices in Chinese wholesale markets (on the order of US$40 to US$53 per kilo in the first weeks, per market reports), which then corrected downward as more volume landed. But rushing the harvest to capture that early premium without protecting the chain produces soft fruit, stem problems or low Brix — and the market punishes all three. When several shippers push at once, oversupply sinks prices. That's why the outcome of a cherry air shipment isn't decided at departure: it's decided by arriving on time, in condition, and with a record of what happened along the way.
Peak-season logistics challenges
- Cut-off and congestion: volume concentrates into a few weeks; cut-offs move earlier, terminals saturate, and locking in confirmed space becomes competitive.
- Unbroken cool chain: terminal waits or long transshipments without refrigeration degrade the fruit. The industry already monitors temperature, humidity and position with onboard sensors.
- Three-way coordination: shipper, freight forwarder and airline working off scattered information (email, WhatsApp, spreadsheets), with no shared view of the shipment.

Hold temperature, by aircraft
At peak, cherries fly mostly on dedicated freighters to China. Hold temperature is controlled and depends on the aircraft (reference values):
- B777F / B767-300F freighters: main deck between 2 °C and 27 °C depending on aircraft.
- Boeing 787: 4 °C – 27 °C.
- Airbus A330: 5 °C – 25 °C.
Documents and traceability: the underrated flank
Perishable air freight carries documentation requirements of its own — and getting them wrong is expensive:
- A single air waybill (AWB): running dual AWBs because of intermediate road feeder legs can muddy the jurisdiction of a claim. Best practice is one AWB per shipment.
- Montreal Convention deadlines: claims for damage and for delay carry short, strict deadlines (on the order of 14 and 21 days); miss them and the right to claim is gone. Keeping documentation and traceability in order is what lets you react in time.
- "Perishable cargo – Keep refrigerated": the AWB must explicitly declare the perishable nature of the cargo and the need for refrigeration in order to hold the carrier liable for temperature excursions.
- Traceability and anti-tampering: premium shipments already travel with NFC chip verification to validate authenticity and condition at destination. Traceability has stopped being an "extra" — it's part of the value.
Delay and operational breakdown risks
Missing the cut-off over incomplete paperwork, getting rolled off a flight for lack of space at peak, or suffering a cold chain break during a connection: any one of the three puts the fruit outside its window or hurts its condition. The cost isn't just the freight you lost; it's the market price of that fruit on that date, which never comes back.
